Coconana was a very experimental beer for us and the beer itself is a blend of styles. Coconana is a 4% Coconut Session Wheat IPA. We chose to blend Bavarian yeast with S-04 and ferment at a high temperature to bring out the fruity esters of S-04 and Banana esters from the bavarian yeast. To back up the fruity yeasty flavours, we utilised Mosaic to bring fresh tropical notes to the beer. To carry on with the tropical theme we threw in toasted coconut chips into the whirlpool and fermenter for good measure! Lovely Jubbly!
